The book "Uit Eten in Amsterdam" describes four centuries of culinary cultural history.

People from Amsterdam have always eaten out. From simple and luxurious inns and dingy cookshops, to chic restaurants, extravagant oyster palaces, and a variety of eateries: throughout the centuries, Amsterdammers found many places to satisfy their hunger and thirst. Being a center of trade, Amsterdam was already a migrant city in the 17th century, with a diverse range of foreign inn kitchens.

In the centuries that followed, the city continued to set the tone for Dutch restaurant culture with the arrival of Parisian restaurants, the first kosher and Chinese eateries, pizzerias, bistros, squatter kitchens, and "nouveau ruig" establishments.

Historians Maarten Hell and Charlotte Kleyn delved into this overlooked cultural history, in which newcomers from all directions, passionate chefs, shrewd entrepreneurs, and curious food lovers play a leading role.
